The winery of ELESKO a.s. in Modra has all the elements of a top production plant. The equipment for each stage of production uses the latest techniques and equipment in modern grape processing and wine production. The equipment is laid out to make optimal use of the plant, which has been built with precise attention to detail taking into consideration ecological requirements. It blends harmoniously into the landscape and has good connections to transportation systems in the Malokarpatská region. The whole philosophy of production is oriented towards ensuring the quality of the resulting product. The winery produces wines with a refined sensory composition that emphasise their the local terroir.  The resulting wines are of a European standard.

Modern and innovative technological procedures are implemented using the most advanced machinery, lines and equipment from the best manufacturers supporting the wine industry. Grapes can be pressed in open and closed pneumatic presses. The first variant is best suited to processing red grapes while the second type of pressing is for white grapes. The pressed must is transported using the most modern piping technology via a system of tributary, vertical and gravitational stainless steel distribution pipes. This “sensitive” approach to transport avoids damage to the aromatic microstructure of the must and makes use of gravity. Red grapes are fermented in computer controlled Taucher-type fermentation tanks. The programs control not only the temperature of fermentation (which can be “lowered” and “raised”) but also the interval at which the fermentation cap is punched down, in order to increase the quality and intensity of the colour and aroma extracted during fermentation. The processes for both white and red wine make use of F2 fermentation tanks, which allow red and in particular white grapes to undergo cryomaceration. This modern and progressive pre-fermentation treatment of the (white) mash makes it possible to extract juice from the grapes in a manner that, combined with corresponding physical management of fermentation, ensures a rich and balanced “fruit” aroma in wine.

The most important process in winemaking is fermentation. As this is an exothermic process, heat removal is essential. ELESKO a.s. ensures effective physical management of fermentation through the design and equipment of its fermentation apparatus. The fermentation apparatus is designed to exploit the principle of a vertical workflow of yeast. Fermentation tanks with duplicators provide an effective system for cooling the fermenting must. The fermentation processes in every tank are controlled and managed by computer programs. These also record the progress of fermentation and output graphs of the process.

Peristaltic pumps are used to transfer the must. The firm uses cross-flow filtration with ceramic membranes to filter wine. This approach is not only innovative but also ecological as it is less harmful to the environment. The bottling lines from leading world manufacturers are in the vanguard of mainstream contemporary winemaking. Bottling lines pour wine into sterile bottles in an inert nitrogen atmosphere. All these procedures protect the wine against microbial contamination and oxidation. the unquestionably contribute to a “more ecological” end product with enhanced hygienic values.

The firm has purchased a WINESCAN scanner to carry out complex analysis of the chemical composition of musts and wines. It should not be necessary to mention that all areas of the plant are climate-controlled, that clean air is circulated and kept at an optimal level of humidity.

The concept for the construction and operation of the ELESKO plant in Modra, including the scale and quality of its innovative use of technology, has no equal in contemporary Slovakia.  It is a unique winery, not only in our country but also in central Europe as a whole. The processing capacity of the plant is sensitive to the needs of this country and the natural capacity of the Modra winegrowing district of the Malokarpatská winegrowing region. ELESKO a.s. Modra processes only grapes that have been grown in its own vineyards using ecological cultivation techniques.
